Indian Flatbread - Baking Naan Bread in the Pan

There are already a few recipes for bread from the frying pan on my blog. It goes so well with camping. Itˋs all over the world: starting in Mexico with tortilla flatbreads, on to Morocco, then to Italy and now all the way east to India. There is naan bread.

What sets Naan bread apart from other flatbreads?

The shape: Naan bread is rolled out thinly and elongated. It is slightly thicker than tortilla patties but not nearly as thick as focaccia.
The yoghurt: Yoghurt is added to the dough. Traditionally, naan is a yeast dough, but it is often baked with baking powder. I'll try that out soon!

With what and how is naan bread eaten?

Since naan is an Indian bread, of course with curry! Tear off and dip or dip and wipe out the bowl with it at the end so that every delicious drop of curry sauce ends up in your stomach. Of course, you (and I) can spread it with fine spreads, top it with cheese and eat it just like that with a salad.

The preparation of naan bread is really easy. Baking it in the pan is also lightning fast, just 30 seconds of each side is needed for a patty. Let's get started!

Ingredients
for 5 patties

250 g wheat flour
75 ml lukewarm milk
1 pinch sugar
1/2 packet dry yeast or 10 g fresh yeast
1/2 tsp salt
1 tbsp vegetable oil
75 g natural yoghurt

Place the flour in a bowl and form a trough.

Sprinkle in the yeast and sugar and pour in the lukewarm milk. Stir everything with a fork and let it work covered for 10 minutes. You can find many tips for a good yeast dough here (click).

Now add oil, salt and yoghurt and knead everything into a smooth dough.

Let this rise, covered, in the bowl in a quiet place for 1 hour.

Knead the dough again and divide it into 5 equal pieces.
Shape them into balls and roll out the dough into an oval shape with a thickness of 1 cm.

Heat up your pan.

Put a patty in and bake this side for 30 seconds.
Turn the pancake and bake the other side for 30 - 40 seconds. If the pancake is too dark, turn the heat to medium. You will have to try this out a little. Be careful not to burn the patties, especially at the beginning.

Stack the naan bread in a tea towel. It stays warm and soft there.

The flatbreads taste the best fresh, of course. 
The next day I heated the naan briefly in the pan, then it was perfect again.

Now you can create many different variants of Naan bread.
For example, add fried onions or herbs to the dough. Or sprinkle the patties with black or light sesame seeds. They are especially tasty if you rub garlic oil into each patty before baking. So good!
