Pan-Fried Irish Potato Bread

A new recipe for the pan: Irish flatbread with a large potato and a small flour portion. You really only need 4 ingredients for Irish potato bread, it's really quick to make and wonderfully versatile. Best of all, you don't need an oven for it, just your frying pan!
 
First a confession: I don't associate this bread with a romantic idea of a holiday in Ireland. Although it did exist 15 years ago. On a boat along the river Shannon through Ireland. It was a dream! But I never got to know this potato bread. Could have something to do with the fact that I was not yet a foodie. It would be very different today...

Perfect for camping kitchens!

Why I absolutely had to bake it very quickly:

  • Because I like Ireland very much. Galicia, where we go every summer, is like Ireland, only further south.  
  • I like potatoes in bread just as much. You can find the recipe for my juicy potato bread in the book "Baking Bread with the Omnia".
  • Traditionally, Irish potato bread is baked in a pan! So it's perfect for your camping kitchen without an oven!

What makes a good recipe for me:

  • When it works without problems the first time.
  • When I am visually satisfied with the result.
  • When the "taster" can hardly stop himself from grabbing a piece immediately BEFORE I have taken photos of it!
  • When the "taster" munches the first potato bread full of joyful expectations. Nods. And then asks, "Can I have another piece?"

At the latest then I know: you HAVE to get to know this recipe!
 
The potato bread tastes good both warm and cold. But it can also be easily baked in the pan.

Ingredients

220 g steamed potatoes
2 tbsp vegetable oil or melted butter
1/2 tsp salt
60 g (4 lightly accumulated tbsp) flour

Mix the steamed potatoes with the fat and salt.

Now carefully knead the flour under until everything is well combined and you get a smooth, non-sticky dough.

Roll out the potato dough as a patty 24 cm in diameter and 1 cm thick.

Place the patty in the cold pan and bake on high heat for 5 minutes.

Set the cooker on the lowest heat and turn the potato bread.

Bake the other side on a small flame for 10 minutes.
It's ready so quickly, your potato bread from the pan. You can now enjoy it with sweet or savoury toppings or as a barbecue side dish!
